It’s Easy Recipe Wednesday! I have vowed to you all, my followers, that I will never post a recipe that requires too much effort or too many ingredients. So, I’m trying out a new series for Wednesdays where I will post simple recipes. Some might even be so simple you will laugh at me! Here’s a fun one I took off a bag of rice! So really, I don’t take any credit. This is 100% to the credit of good ole Uncle Ben.Β Thanks so much, Ben!
I was gifted this bag of Uncle Ben’s flavor infusions rice from the good folks over at Influenster.
I love getting freebies from them! Especially food. This one saved me from having to come up with an idea for dinner last night and it turned out so good! Here’s what you need:
1 tbsp olive oil
1lb chicken thighs (I used chicken breasts, still tasted good)
1 onion, diced
1bag of frozen mixed veggies (I used a can of mixed veggies I had on hand and it turned out fine)
1cup of Uncle Ben’s Flavor Infusions Rice
2 cups of water
-Brown the chicken in the oil
-add onions
-add veggies, rice and water
-bring it to a boil
-cover and simmer on medium for about 15 minutes until the rice is cooked.
And voila! It was so yummy!
