I was craving something sweet the other day and we were in desperate need of groceries.
That meant it was time to get creative with what we did have. We have been on WIC since Leopold was born so we never run out of peanut butter. This is a good thing now that he is obsessed with it. We also get to choose from a selection of basic, bland cereals like Corn Flakes. We had some apples left over from our last grocery trip, and that’s when it hit me. I have to make these stuffed apples, I haven’t had them in forever!
My mom used to make this for me all the time as a child and it was always such a fun snack. Bonus points because it’s healthy, too! I seem to always forget that it’s an option even though we usually have all the right ingredients in the house.
They are so simple and cheap to make so I want to share the ‘recipe’ with you! I am not a chef, and I’ll never claim to be great at cooking or baking. If you see me posting recipes, chances are there are only a few ingredients. Chances are it’s using items you have lying around. I may not be a great chef but I’m pretty good at making food out of ‘nothing’ as my husband says.
So here it is! Peanut butter and Cornflakes Stuffed Apples
What you will need:
- A handful and a half (or so) of Cornflakes. Off brand works just as well as Kellogg’s!
- Peanut Butter (any kind)
- Apple (any kind) My favorite is Granny Smith!
- Bowl
- Spoon or fruit scooper
- Knife
And that’s it!
Start by cutting your apple in half. Now you’re done with the knife. Put it in the dishwasher!
Dig out the core and throw that away. Now scoop out as much apple as you can without cutting holes in the peel.
Put the apple scoopings into a bowl.
Add a couple of large spoonfuls of peanut butter into the bowl.
Add your cornflakes.
Stir it up.
Scoop it into your apple shells and pack it in.

(You have some peanut butter on your nose!)
